Sparkling wine made exclusively from Cesanese grapes, carefully vinified in the Casale della Ioria cellar following the Martinotti method. The hand-picked bunches undergo cryomaceration immediately, and the secondary fermentation is carried out at a constant temperature for a long time, resulting in a wine with a fine and persistent perlage.
